 Foodies Rejoice! 

Farmers and food connoisseurs alike are rejoicing in Mexico this week.  The slightly wet weather this week south of Mexico City has led some of their corn to rot!  Normally, this would be a horrible.  Corn is of course a staple of Mexican society.  The rotting corn, however, brings out an Aztec delicacy known as cuitlacoche.  Cuitlacoche grows when water gets in between the husk and kernals in an ear of corn and begin to rot the kernals.  Out of the rotting corn grows a gray, stone-like fungus.  This fungus is a popular delicacy and is used in soups and quesadillas.  When cooked, it turns into a goopy tar like black ooze.  This substance has a tangy mushroom flavor with a hint of raw corn.  A pound of the fungus can sell for $3 and is very well respected by high level chefs both in and out of Mexico.
